1 medium cauliflower (cut into florets)
1/3 cup rice flour or all-purpose flour
1 tablespoon cornstarch
1 teaspoon oil
1/2 teaspoon garlic powder (optional)
1/3 – 1/4 cup water (adjust for batter consistency)
1.5 tablespoons sesame oil
1/4 cup light soy sauce
1 tablespoon rice vinegar
1–2 tablespoons Sriracha sauce (adjust to taste)
1 inch fresh ginger (finely chopped)
4–5 cloves fresh garlic (finely chopped)
2–3 tablespoons honey or maple syrup
1 tablespoon cornstarch
1/4 cup water

Instructions
First, wash the cauliflower thoroughly and cut it into even florets. Make sure the pieces are not too small so they do not burn while baking.
In a bowl, mix the rice flour or all-purpose flour, cornstarch, oil, and garlic powder. Gradually add water until a smooth, thick batter forms. The consistency should be thick enough to coat the florets.
Dip the cauliflower florets into the batter, ensuring they are evenly coated. Let excess batter drip off.
Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment paper to prevent sticking.
Spread the coated cauliflower florets evenly on the baking sheet. Bake in the preheated oven for 20 minutes, until golden brown and crispy. Make sure to flip them halfway through for even cooking.
While the cauliflower is baking, heat the sesame oil in a small pot. Add the finely chopped ginger and garlic, and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
Add the soy sauce, rice vinegar, Sriracha, honey or maple syrup, and cornstarch. Stir well and bring the mixture to a boil. Reduce the heat and let the sauce simmer for another 2-3 minutes until it thickens.
Once the cauliflower is baked, remove it from the oven and pour the prepared sauce over it. Mix everything well so the florets are evenly coated with the sauce.
Garnish the Sticky Sesame Cauliflower with sesame seeds, green onions, and sliced chilies. Serve the dish hot and enjoy!
